Ioka Valley Farm has Grade A Light, Medium, and Dark Amber available in various sizes. Light Amber has a very delicate, but clear maple flavor. Medium Amber has a more pronounced maple flavor and the most popular grade of table syrup. Dark Amber has a deep color and stronger maple flavor.

Pure maple syrup is made when you take the watery sap from the maple tree and boil it to 7 degrees above the boiling point of water. Approximately 40 gallons of this watery sap (about 1 – 2 % sugar) is needed to be boiled down to make 1 gallon of maple syrup (about 66.9% sugar).
